For those of us who love biting into fresh, crisp lettuce, the world of salads has never been so customizable, Pinterest has hundreds of recipes for you to try, or if you visit your local Farmer's Market your bound to find plenty of goodies with an occasional recipe from the vendors.
A summer favorite is the arugula and spinach salad with blueberries, pecans (or other nuts) and chèvre cheese with blueberry vinaigrette dressing. (I like to pair this with a Champagne Vinegrette or Hita-made Honey Lime Vinaigrette)

The spinach and orange smoothie is an excellent way to start our your day. The orange will provide you with energy and the spinach is loaded with fiber to keeping you full. To make this smoothie, peel 1 orange, 1/2 of a peeled banana, 1 cup of spinach, and 1/4 cup of coconut (water works just as well) into a blender.
